Banana Nut Teabread

This is a moist cakelike coffee cake that is best served with softened butter.

Ingredient list


Preparation: Preheat oven to 350 F Sift together 1 ¾ cups flour, 2 teaspoons baking powder, ¼ teaspoon soda, and ½ teaspoon salt. Set aside. Cream 1/3 cup butter, add 2/3 cup sugar, and beat until light and fluffy. Add 2 large eggs, well beaten, and beat thoroughly. Add the sifted dry ingredients alternately with 1 cup mashed ripe bananas (approximately 2 ripe bananas), beating after each addition until the batter is smooth. Fold in 1 cup coarsely chopped nuts. Turn the batter into a buttered bread pan and bake in a moderate 350 F oven. for about 1 hour and 10 minutes, or until a toothpick inserted into the center comes out clean. Cool 10 minutes in pan and then turn onto a rack to cool completely. Store in an airtight container, or wrapped in plastic wrap.
