Preparation

Boil 1 lb navy beans with 8 cups of water for 2 minutes. Cover, then soak 1 hour. Drain, then rinse. Sautee 1 medium diced onion with 4 tbsp butter, add to beans. Add sauteed onion, 1 quart chicken broth, and 8 oz. finely diced ham. Simmer for 1-1/2 to 2 hours until beans are soft.
