Brown the ground beef in a skillet, season with salt and pepper, drain reserving the excess fat, and set aside. Add the onions and garlic to the hot fat, and sauté until translucent. Reduce the heat to medium, and add the tomato paste. Stir until well incorporated into the mixture, taking care not to let it burn. Return beef to the pan, add all remaining ingredients, and stir gently until well mixed. Reduce heat to low, and simmer partly covered for several hours. The longer it cooks, the better the flavor. Cooking all day in a crock pot on a low setting works well. The flavor of the sauce improves on the second day. All spices may be increased or decreased according to your particular taste. You can also boil up a cup of elbow macaroni, saute a couple of stalks of chopped celery in butter, and add them to the leftover chili, and you have Chili Mac. Vegetarian Version: Sauté Onions and Garlic in ½ Cup of Extra Virgin Olive Oil, and add 1 Cup of Bulgar Wheat grains as the final ingredient as a substitute for the Ground Beef. Incorporate thoroughly into the mixture, and simmer partly covered as above on a low setting, stirring frequently. Check for the doneness of the Bulgar Wheat grains before serving. Great for a crock pot, and freezes well. Flavor and texture improves with age.
