Black Beans & Rice

Buy yourself a bag of black beans. Rinse and soak them overnight for 6 - 8 hours. Rinse again. In a large pot sauté 2 medium chopped onions, 5 stalks of celery diced in some olive oil. After the onions are translucent add the rinsed beans and water to cover them. Add enough water apx. 8 cups. Cover with a lid and bring this to a boil then reduce the heat to a simmer. Add 3 bay leaves, salt, pepper and red pepper flakes and 1 tablespoon minced garlic. Don\'t over season, add some seasoning then taste, then add some more to your liking. Simmer for 1 to 2 hours stirring once in a while. Sample the beans after an hour for tenderness and season if needed. When they are done they will easily broken apart when you eat them. Don\'t over cook them. Make sure the water does not evaporate too quickly. Add more water if needed. Remove the bay leaves and serve over basmati rice. ENJOY!
