Chicken Paprikas

Heat a 6-quart heavy stovetop casserole and add the lard or oil and Paprika. Sauté the paprika for about 1 minute and add the onions. Sauté for a few minutes and add the remaining ingredients except for the thickening. Bring to a simmer and cook, covered for about 45 to 60 minutes (until all are tender). Remove the chicken pieces and set aside. Mix the sour cream and flour well with a wire whisk. Add 1 cup of the juices from the pot to the cream and stir well to avoid lumps. Stir this mixture into the pot and stir while it thickens. Return the chicken to the pot and restore the heat. Serve with noodles or Hungarian dumplings.

Hungarian Dumplings (Galuska) ingredients: 1 Cup flour (sifted), 1½ Tsp. baking powder, ½ Tsp. salt, 1 egg (well beaten), ½ Cup milk, 1 Tsp. butter (melted). Instructions: Sift together dry ingredients. Combine egg, milk and butter; add gradually to flour, stirring until dough is smooth and no longer sticks to spoon. Break off pieces of dough about 1 in long and 1/2 in thick and drop into rapidly boiling water; boil covered, for 12 to 15 minutes.
