In a bowl, whisk together the first 5 ingredients to make tomato sauce. In a large bowl, combine remaining ingredients, kneading together with your hands. Add 1 cup of the tomato sauce, and mix together thoroughly. Press into 8 x 1 x 2-inch loaf pan. Cover top of loaf with approximately ½ Cup tomato sauce. Place loaf pan on a pizza pan to catch any overflow. Bake at 400° F. for 1½ hours, or until no pink remains (internal temperature should be approximately 160° F.). Remove from the oven and let rest at least 15 minutes before slicing. Bring remaining tomato sauce to a boil, and serve as gravy over the meatloaf.
