Great hot party appetizer! Can be made in advance, frozen, and baked off as needed.
Brown the sausage meat in a skillet, breaking it up into small pieces while browning, and drain well. Allow to cool, and mix in, all of the remaining ingredients together.
Brush an egg roll wrapper with egg wash and place ½ oz of filling in center (I use a melon ball size scoop). Fold over-corner to corner to form a triangle and crimp the edges with your fingers, or a fork to seal. Wontons can be frozen at this point and stored in an airtight bag. They may be deep fried or baked, directly from the freezer, without defrosting.
Deep fry in hot oil to a golden brown (or bake in a 375º - 400 º F oven, on a lightly greased baking sheet) and drain on paper towels.
Serve immediately with guacamole, sour cream and/or Salsa.
