Charlie’s Hot Curried Fruit

This is a warm fruit dessert. It looks somewhat unappetizing, but tastes delicious!

Preparation
Preheat oven to 325 degrees. Combine fruit and pour into large baking dish. (I usually double the recipe for potlucks, so I use a 9 x 13 baking dish.) Slice bananas over the top of the mixture. Sprinkle brown sugar over top. Melt butter and stir in ginger and curry powder. Pour sauce over top of baking dish and bake for 1 hour. (I stir it halfway through so the butter mixture coats all of the fruit evenly) Serve warm in a crock pot (on low) and enjoy.

This recipe is the legacy of a gay man, living with aids in Little Rock, Arkansas. I was part of an aids support team in Seattle and the director of the program, Trudy James, gave me the recipe. Charlie was a client of hers when she lived in Little Rock, and he brought this dish to every potluck. Trudy carries on his tradition by making this for every dinner and potluck she attends. This is Charlie\'s legacy, and I am happy to be able to carry it on also. If you pass the recipe on, please include this scenario about Charlie, so that his legacy lives on. Ron R.
